The debut restaurant from Tom Adam and Juno Miers pays homage to London chef Margot Henderson and is already a firm favourite for Wellington food-and-drink lovers. The menu changes often although a tin of Ortiz anchovies and seriously good bread and butter will always be a staple and there will always be raw fish in some form – ours was trevally with crème fraîche, tomatillo, shishito chilli and cumin. Flavours are bold but not over complicated with a roast cabbage dressed with curry sauce and yoghurt kicking way above its weight, while Tom’s take on a steak tartare using chopped raw beef, caramelised onion and parmesan is a definite keeper as is the wonderful sheep’s milk panna cotta with quince.
