Just 90 minutes from Christchurch, the restaurant is led by chef Taylor Cullen, whose menu is shaped by what is grown, foraged and harvested on the property. From fruit and vegetables to herbs and edible flowers, much of what appears on the plate comes directly from the extensive kitchen gardens, creating food that reflects the rhythm of the seasons. The kitchen works hand in hand with the land, using companion planting, preserving and fermentation to make the most of every harvest and extend the growing season through the high-country winters. Native ingredients and a commitment to minimising waste all play a part in dishes that are thoughtful without feeling overcomplicated. The menu changes constantly but you might find a pizza topped with pear, blue cheese, thyme and honey, beautifully balancing sweet and savoury flavours, followed by clove trevally or a selection of chocolate petit fours to finish.
