A Wellington institution since 2002, Capitol on Kent Terrace is a long-standing favourite built on simple, ingredient-led cooking and a genuine love of hospitality. Chef-owner Tom Hutchison brings global experience to a menu that stays firmly focused on flavour, while his wife Kate Hutchison ensures the front of house runs with warmth and ease, serving food and wine they both genuinely enjoy. The philosophy here is very much less is more, with dishes designed to enhance rather than mask the natural quality of the ingredients. The linguini alle vongole with little neck clams, white wine, herbs and stock is a standout, simple, comforting and full of flavour. Dessert is equally memorable, particularly the crème brûlée with black Doris plum, which adds a twist to a classic. The atmosphere is relaxed and welcoming, with a touch of cosmopolitan charm.
