Bellamys head chef Joshua Ross is one to watch in Wellington. He’s worked with some of the best in New Zealand and is now coming into his own within the historic building fondly known as The Beehive. Classic dishes took a seasonal twist this autumn in the form of a hearty white bean ragu paired with parsnip, apple, leeks and pancetta or venison fillet married to artichoke purée, black pudding, beetroot and quince. A white wine and saffron-poached pear served with a whipped dulce de leche, dark cocoa crumb and nashi sorbet was beautiful.
