This intimate setting allows for a personalised journey through a menu that highlights both farmed and foraged ingredients sourced directly from the station, with offerings that change daily. It begins with a scenic drive across the land to be met at the top of the world with a chilled glass of champagne, setting the stage for the unique flavours that grace each dish. It might be venison loin served with red cabbage and pear, or wagyu sirloin that is lightly seared and smoked over mānuka and served with warmed bone marrow, crisped kawakawa and pickled elderflower. Perhaps a stunning garden salad with a rich almond sauce will be in the mix.
