An exciting culinary revolution is unfolding at Tala, where Samoan cuisine is being reimagined by talented chef Henry Onesemo. Born in Samoa and influenced by culinary adventures in Hawaii and Thailand, Henry's approach is anything but ordinary. Opening Tala with his wife Debby in 2023, their hard work paid off in the form of the Cuisine Good Food Award for New Restaurant of the Year in 2024. As Tala evolves, the addition of Tommy Hope as head chef has elevated this dining experience even further and Tommy’s innovative spirit is already reshaping a menu that remains at the forefront of contemporary cuisine. The signature Umu chicken is still on the menu inspired by memories of Henry's childhood along with a spectacular series of small courses - presented by both chefs - that pair perfectly with their engaging narratives. A standout is the 'Roadside BBQ' dish, celebrating an iconic Samoan food experience and a special historical element of fa’a Samoa (the Samoan way). This is not just food; it’s a journey into the heart of Samoa, served with flair and a side of thoughtfulness.
