The restaurant’s commitment to showcasing Northland's unique produce is evident in every dish crafted by executive chef Dan Fraser, a visionary dedicated to elevating the region's culinary reputation. The menu features beautifully presented creations that celebrate local flavours. Don’t bypass the snack of the day: two pieces per person that are always a fresh representation of what's in season and top of the chef's current artisanal favourites. The signature dish - Fiordland crayfish risotto - will hopefully be on, Ruakākā blue pāua is a winner (whether in a fritter or on prawn toast) and Speckle Park eye fillet is glorious on a caramelised cauliflower purée with oyster mushrooms and estate greens. Guests can indulge in a thoughtfully curated à la carte menu or opt for the adventurous Trust the Chef experience. On a blue-sky day you won't find a better Sunday lunch than Sage.
