A standout item on the menu are the turnip cakes, inspired by traditional dim sum, served with a silken white onion soubise and an apple consommé. Delicate and fragrant, these cakes showcase Alex’s ability to transform vegetables into something extraordinary. Culinary heroes may be pickled mussels, crispy artichokes, farmed haku kingfish or celeriac that has been slowly cooked over charcoal, all of them treated with incredible respect and dressed in sensational sauces or ferments that are designed to elevate each showcase ingredient.
