Chef-owner James Stapley has been on the pans since the age of 16 and is the mastermind behind some of the area’s hottest eateries. Here he teams with talented Irish-born chef Ruairi Bachofner who oversees the kitchen while Victoria Maria Shaw runs a front-of-house team who are smiling, knowledgeable and confident. The food nails the ‘contemporary Kiwi cuisine’ description, ably demonstrated in dishes such as the Otago cherry and chocolate pavlova. Their version of crudo may be scallops or fish but, be assured, the deep and vibrant ginger-herb verde, avocado mousse, bursts of fresh lime and candied chillies make this plate a standout, as is the beef tartare with its shimmering confit egg yolk and a delicious layering of miso mayo and soy jelly.
